You can't go wrong using advice and suggestions from
http://www.heirloomseeds.com/
This is one of a kind site and I am a confirmed devotee. Give it a look. Check out the tomatoes. They have a few hundred varieties (no hybrids) and one you have to check is called Mortgage Lifter. Ever see a 2 pound-plus pink tomato?

I haven't seen it but I was assured by a friend that it not only exists, but that he raised them as a kid in backwoods Ohio. He had a slightly different name for it, but considering local vernacular and how good we are at tranmitting lore (look what has happened to fairy tales and nursery rhymes,) it is a bit suprising that the name continues to exist at all in a recognizable form. I'll hunt up a photo if one exists. As for the size, the plants all seem to do that. part of the genetics of the plant, not the method of growing, though I suspect it was developed long enough ago that organic was the ONLY method available.
